Fluffy Matcha Cake Recipe
Ingredients
- 6 Separated Eggs
- 1/4 tsp Salt
- 1/2 tsp Vanilla Extract
- 7/8 cup White Sugar
- 2 tsp Honey
- 2 tsp Water
- 7/8 cup Cake Flour
- 2 tbsp Matcha Powder
- 1/2 tsp Baking Powder
- 1/3 cup Vegetable Oil
- Whipped Cream (optional)
- Raspberries (optional)

Matcha Cake Method
Step 1 – Beating the Egg Whites
Preheat oven to 180 degrees celsius.
Add 1/4 teaspoon of salt to the egg whites and continue to whip the eggs until they form stiff peaks. Set aside.
This may take some time but once the egg whites start to form soft peaks the stiff peaks are not far away.
Step 2 – Preparing Egg Yolk Mixture
In a separate bowl beat 6 egg yolks, 1/2 tsp of vanilla extract, 7/8 cup of white sugar, 2 tsp honey and 2 tbsp water until it turns a pale yellow, everything is mixed well and has a fluffy consistency.
Step 3 – Combining the Mixtures
Add half of the whipped egg whites to the egg yolk mixture.
Gently fold the two mixtures together to prevent the egg whites from losing their volume and fluffy nature.
Sift in 7/8 cup of cake flour, 2 tbsp of Matcha powder and 1/2 tsp of baking powder and gently fold until all of the ingredients are fully mixed.
Add 1/3 cup of vegetable oil to the bright green cake batter.
Add the remaining stiff egg whites to the mixture and combine until completely mixed.
Step 4 – Preparing the Cake for Baking
Pour the mixture into two 6-inch cake tins lined with parchment paper on the bottom and sides. This will prevent the mixture from sticking to the sides of the cake tin.
Step 5 – Baking the Matcha Cake
Bake at 180 degrees for about 30 minutes or until a toothpick comes out clean and the cake has a fluffy texture.
Remove the cake from the oven and allow to cool completely before decorating in the style you want.
Step 6 – Decorating the Matcha Cake
Try adding a layer of whipped cream and having a fantastic two-tiered Matcha cake with a raspberry and whipped cream garnish.
